Nutritarian?

Today is Sunday. Last Monday Dale and I started a new eating style called “nutritarian” which basically means we are eating foods that give us the most nutrients with the least amount of calories. For example, olive oil is not bad for you but it is high in calories without providing any additional nutrients. Because of this, we sauté using water instead of oil when at all possible. We get our fats from nuts and seeds instead.

Why? Because it’s healthier and will result in overall good health for the both of us. The catalyst for this change was Dale discovering that he is prone to having heart disease. Recent tests indicated the beginnings of calcium buildup in his arteries – the same issue that caused his father to get stents a few months ago.

My opinion? It’s not easy, especially when all of the recipes you’ve made all your life are out the window. I believe the Lord has cleared the path for this change and we would be foolish not to follow it. He has provided all that we need to be successful.

This plant-based, whole-food, high-nutrient diet is referred to as “nutritarian” by Dr. Fuhrman. Our largest meal is a salad, we eat at lot of vegetables, soups, beans, seeds, nuts and fruit. This weekend we ate out for breakfast on Saturday and lunch on Sunday without compromising our healthy eating. I consider that a win!

We are about to begin our second week of the meal plan. I miss my familiar foods and tasty snacks, but it will all be worth it!
